Heres the recipe as promised:

RHUBARB & GINGER SPONGES
4 points per serving ; serves 4

Ingredients:
6oz rhubarb, cut into chunks
3&1/4 oz caster sugar
low fat cooking spray
2&3/4 oz low fat spread
1 room temp egg beaten
2&3/4 oz S.R. flour
1/2 tspn baking powder
1/2 tspn ground ginger
1 tbspn orange juice
1/2 tspn icing sugar for dusting

Sprinkle 1&1/2 tbspn of the sugar over the rhubarb & mix together, set aside for 25mins

Preheat the oven to 190, or 170 for fan oven.
place 4 ramekins on baking sheet & mist with low fat spray, set aside

Cream the remaining sugar & low fat spread until light & fluffy

Gradually add the beaten egg, sift in the flour - ginger & baking powder to combine. Stir in the orange juice, then fold in half of the rhubarb.

Divide the mixture between the ramekin dishes, then top with the remaining rhubarb pieces, bake for 25 mins or until risen & golden.

I swapped half of the caster sugar for splender... & left off the icing sugar...so it cuts down the points even more, these are delicious eaten warm, with a desert spoon of single cream poured into the centre...you wouldnt know they are weightwatchers, as they taste very naughty.. dollchitchat/4.gif

sounds really great, ill have a go, as no body but me likes rhubarb may be i could substitute stewed apples
